"That One Samoosa Dip"

We all know the taste of "that specific Samoosa Dip" that has the perfect ratio between sweet, tangy and spicy flavours.




Ingredients:

2 Finely chopped Fresh Red Chilli

2 Finely Chopped Fresh Green Chilli

1 tsp Garlic & Ginger 2 tsp of good quality, Hot Chilli Powder 1 heap tsp Roasted Masala

1 heap tsp Mother in Law Masala

1 tsp Garam Masala 700ml bottle All Gold Tomato sauce 300g Amli (Tamarind) Block 1 tsp Mustard Seeds 2 tbsp Sesame Seeds 2 stems Curry Leaves 4 tbsp Brown Sugar 3 tsp Salt ½ cup White Vinegar ½ cup oil

1. Soak the amli (tamarind block) in vinegar, when softened, strain then mix in tomato sauce. 2. Add salt and sugar. 3. Heat oil on medium heat, and braise the fresh chillies, garlic & ginger, sesame seeds, curry leaves, mustard seeds and all your masalas until the sesame seeds lightly brown and all the ingredients combine into a fragrant smell of little india. 4. Add your tomato mixture and mix well. 5. Leave to completely cool before you bottle and refrigerate.
