Chicken & Prawn Jalfrezi




This is one of my favourite dishes to make, especially when i'm feeling for a good spicy punch with my meal.

Ingredients

  • 300g King Prawns

  • 2 Chicken Fillets (Small Cubes)

  • 150ml Chicken Stock

  • 50ml Melted Ghee (or substitute with Groundnut oil)

  • 1 Medium Onion - Chopped

  • 1 heap tsp Garlic Puree

  • 1 heap tsp Ginger Puree

  • 1 tsp Turmeric

  • 2 tsp Roasted Masala Powder

  • 1 tsp Mother in Law Powder

  • 1 tsp Chilli Powder

  • 1 tsp Garam Masala

  • 1/2 tsp Cumin Seeds

  • 1/2 tsp Coriander Seeds

  • 4 Freshly grated tomatoes (or substitute with 1 Tin Chopped Tomatoes)

  • 2 tbsp Tomato Puree

  • 3 tsp brown sugar

  • 6-8 Finger Chillies

  • 1 Fresh Lemon

  • 100ml cream or coconut milk

Directions

  1. Add the ghee/oil to a pan over a high heat. Add the cumin and coriander seeds and when they begin to sizzle add in the chopped onion.

  2. While the onions are frying, in a bowl mix the garlic puree, ginger puree, turmeric, chilli powder and roasted masala powder, mother in law curry powder with a splash of water or lemon juice to make a paste.

  3. Once the onions start to turn golden add the paste to the pan and stir for 3 minutes. (Please don't burn the paste)

  4. Add in the chicken and chillies and cook for 15 minutes.

  5. Add in the king prawns and stir until semi cooked.

  6. Mix in the tomatoes, chicken stock and tomato puree, sugar and bring up to the boil then, reduce the heat to low and leave to simmer for about 10 minutes until the sauce has thickened. Stir frequently!

  7. Have a taste of the sauce and add a pinch of salt & lemon juice if required

  8. Add in the cream/coconut milk and garam masala then cook for a further 5 minutes

  9. Serve with jasmine rice or naan & garnish with fresh coriander & a slice of lemon.
