Ma's Koeksisters, on Eid.

The excitement the night before Eid never gets old. The food, the outfits and most importantly the fellowship with family on this special day makes my heart melt.


One of my favourites, is waking up to the smell of the syrup of Oumas delicious malay koeksisters. My oumas koeksisters are the best koeksisters lol, try her recipe out and see for yourself.


Ingredients

4 Potatoes

480g Cake Flour

5ml  Fine Ground Nutmeg

5ml  Salt

15ml Ground Ginger

15ml Ground Cinnimon

15ml Whole Aniseed

5ml  Fine Aniseed

60ml Sugar

1pkt Instant Dry Yeast (Ouma insists that you should only use Anchor Yeast in the purple pkt)

30ml Butter (Ouma said it must be the unsalted Choice Butter lol)

250ml Warm milk

60ml Oil

2 Eggs, Beaten

Coconut for Rolling

Oil for Deep Frying


Method

1. Boil potatoes and mash while still hot with a little bit of the potato water to make it extra smooth.

2. Sift flour with salt, spices and sugar then sprinkle over yeast and mix through.

3. Melt butter and add milk, oil and beaten eggs, mix well then add to mashed potatoes.

4. Make a well in the centre of the flour and add the warm milk mixture.

5. Mix into a soft dough then place on a lightly floured working surface then knead with love for about 15 minutes into a soft, smooth, elastic-like dough.

6. Place in a lightly oiled bowl to prevent sticking and lightly oil the top of your dough then cover with cling wrap.

7. Place in a warm place to rise so it can double in size.

8. On a lightly oiled surface, roll dough into two sausages then cut into equal size portions and shape like a malay koeksister.

9. Leave on a greased table to rise and double in size for about 10-15mins.

10.Lift koeksister gently to keep it in shape then fry in moderately heated oil until golden brown on both sides. make sure that the oil is moderately hot in order for koeksister not to absorb too much oil then place on absorbent paper and allow to cool.

11. While your koeksisters cool, make your syrup. (Syrup Recipe Below)

12. Dip koeksister in syrup over low heat then roll in coconut and voila!


Making syrup

2½ cups sugar

2 cups   water

2 whole sticks of cinnimon

2 cardamon pods

1. Add all these ingredients to a deep saucepan and simmer over low heat until syrupy.
